Poached Eggs with Frozen Peas, Spinach + Feta

This dish is so simple, even if you’re a newbie in the kitchen you’ll be able to whip these poached eggs with frozen peas up in a flash!

Ingredients

  • 1 tablespoon coconut oil, butter or ghee, for greasing.
  • 1/2 cup frozen peas.
  • 2 cups fresh baby spinach.
  • 1 tablespoon feta.
  • sea salt, to taste.
  • 2 Poached Eggs.

Directions

1. Heat oil over medium heat in a saucepan. Toss through frozen peas and spinach until peas are thawed.

2. Meanwhile, if you’ve pre-cooked the eggs, warm them in the microwave for 20 seconds, submerge briefly in a large cup filled with hot water or serve cold. Otherwise, poach your eggs.

3. Serve veggies in a bowl, topped with poached eggs. Sprinkle with feta and sea salt to taste.


Note

For a vegan/dairy-free option: Try ½ avocado and ¼ cup walnuts instead of feta and eggs.
