Ingredients
- 1 tablespoon coconut oil, butter or ghee, for greasing.
- 1/2 cup frozen peas.
- 2 cups fresh baby spinach.
- 1 tablespoon feta.
- sea salt, to taste.
- 2 Poached Eggs.
Directions
- 1. Heat oil over medium heat in a saucepan. Toss through frozen peas and spinach until peas are thawed.
2. Meanwhile, if you’ve pre-cooked the eggs, warm them in the microwave for 20 seconds, submerge briefly in a large cup filled with hot water or serve cold. Otherwise, poach your eggs.
3. Serve veggies in a bowl, topped with poached eggs. Sprinkle with feta and sea salt to taste.
