Breakfast Casserole

This breakfast casserole breaks so many rules (turnips for breakfast?!) but it is simple and tasty, and freezes well.

Ingredients

  • coconut oil, butter or ghee, for greasing.
  • 2 beef or pork sausages.
  • 3 turnips, peeled.
  • 3 green shallots, chopped.
  • 4 eggs, beaten.
  • 1/2 cup Cheddar cheese.

Directions

1. Preheat the oven to 190ºC / 375°F / Gas Mark 5 and grease a small glass or ceramic baking dish.

2. Grate the turnips, using a food processor if you have one.

3. If using sausages, remove the meat and discard the casings. Brown the meat with a little oil in a large hot frying pan until not quite cooked through, breaking it up into small pieces with a spoon or spatula.

4. Toss in the rest of the ingredients and stir, then spoon into the baking dish. Top with cheese.

5. Bake for 45 minutes. Let it stand for a few minutes so the casserole sets before you cut into it.

6. Cut into four portions. Freeze two portions. Serve one portion warm for breakfast. Place remaining portion in a lunchbox in the fridge for tomorrow.

VEGETARIAN OPTION: Replace sausages with extra vegetables. We suggest pumpkin, broccoli, zucchini and greens like kale or silverbeet.
