Mushroom Hash

This mushroom hash is a great way to use up some leftovers in your fridge!

Ingredients

  • a good handful sliced mushrooms.
  • shaved ham, torn up.
  • a large splash milk.
  • 1-2 eggs per person, lightly beaten.
  • handful chia seeds.

Directions

You'll notice that I don't provide precise quantities for this recipe. I use a handful of this or that, or whatever I've got. I suggest you do the same! It's a great opportunity to play and get a little bit loose. You have permission!

Saute the mushrooms and ham in a frying pan until both turn golden, then swirl through some beaten egg, a splash of milk and the chia seeds. Gently stir until the mixture forms a bit of a scramble, then serve.
