Ingredients

  • coconut oil, butter or ghee, for greasing.
  • 500 g minced pork or beef.
  • 1 cup chopped leftover or Par-Cooked-and-Frozen Veggies.
  • 12 eggs.
  • 225 g cottage cheese.
  • several tablespoons chopped herbs (I use sage and thyme) and/or 2 tsp dried herbs and spices (I like nutmeg)..
  • handful grated cheddar cheese.

Directions

1. Preheat the oven to 180ºC / 350ºF and lightly grease a 12-cup muffin tray.

2. Brown the mince in a frying pan with a little oil. When cooked, add in the veggies and cook until just soft.

3. Beat the eggs in a bowl, then add the meat, veggies, cottage cheese, herbs and spices.

4. Spoon into the muffin tray and sprinkle with the grated cheese. Cook for 15-20 minutes. Best served warm.
