I Quit Sugar - Zany for zucchini? Here's 21 zucchini recipes

These zucchini fritters are easy peasy only need three ingredients to work! Great to make in bulk for breakfasts on the go.

Ingredients

  • coconut oil, for frying.
  • 2 large zucchinis.
  • 1 tablespoon coconut flour.
  • 3 eggs.
  • salt and freshly ground black pepper, to season.
  • 1/4 cup cream cheese, to serve (optional).
  • 1 tablespoon chives, finely chopped to serve (optional).

Directions

1. Grate the zucchini - you need 2 cups total.

2. Sift the coconut flour into the eggs and beat them together until smooth. Mix in the zucchini, salt and pepper.

3. Heat a little oil in a frying pan on medium heat and spoon in dollops of the batter. Cook until golden on both sides.

4. Serve warm with cream cheese and chives on top.
