Coconut Curry Meatballs

I Quit Sugar: Coconut Curry Meatballs recipe

Coconut, curry and thyme in a meatball? Yep, and they taste seriously delicious!

Ingredients

  • coconut oil, for frying.
  • 650 g chicken mince.
  • 1 carrot, grated.
  • 2 cloves garlic, minced.
  • 1/2 cup shredded coconut.
  • 1 egg.
  • 2 teaspoons curry powder.
  • 1/2 teaspoon salt.
  • 2 cups thyme sprigs, leaves picked.

Directions

1. Add all ingredients into a large mixing bowl. Combine with your hands until everything is combined evenly. Roll meatballs into 20 even-sized balls and set aside.

2. Melt some coconut oil in a frying pan or skillet on medium-high heat. Add in the meatballs, about 8 at a time depending on the size of your pan. Cook for 2 minutes, then roll them over and cook for a further few minutes until cooked through.

3. Serve meatballs immediately with a fresh salad or some steamed veggies.
