Ingredients
- 2 eggs.
- 1 tablespoon rice malt syrup.
- 1/4 cup coconut oil, melted.
- 1 teaspoon vanilla extract.
- 1 1/2 cup (200g) almond meal.
- 1 teaspoon baking powder.
- 1/4 teaspoon sea salt.
- 1/2 teaspoon ground cinnamon.
- 50 g 85% dark chocolate roughly chopped.
Directions
- 1. Preheat oven to 180ºC/350ºF/Gas Mark 4 and grease or line a small baking tray with baking paper.
2. In a bowl, whisk together the eggs, rice malt syrup, coconut oil and vanilla extract.
3. Then, add in the remaining ingredients and mix to form a batter. Fold in dark chocolate.
4. Pour mixture into the lined baking tray and place in the oven. Bake for 20 minutes until golden on the top.
