Kiwi Green Smoothie with Coco-Nutty Granola

This fresh kiwi minty green smoothie is the perfect way to begin your day.

Ingredients

  • 1/2 cup chopped fennel.
  • 2 kiwi fruit, peeled.
  • 2 large handfuls lettuce.
  • 4 tablespoons vanilla protein powder, optional.
  • 1 large handful mint.
  • 2 tablespoons chia seeds, optional.
  • 2 cups coconut water.
  • pinch granulated stevia (omit in weeks 2-5).

Directions

1. Throw all ingredients into a blender and blend until smooth.

2. Divide between a glass and a jar with a lid. Place jar in the fridge for breakfast tomorrow.


Note

Optional extras: fennel, celery leaves, fresh herbs, leftover greens.
