Simple Apple Pancakes with Grown Up Berry Sauce

These fruity pancakes are great to have for breakfast or lunch any day of the week.  

Servings: 2 (makes 8 pancakes)

Ingredients

  • butter, coconut oil or ghee, for frying.
  • 1 cup self-raising flour.
  • 1 egg.
  • 1 cup unsweetened almond milk (or milk of your choice).
  • 2 teaspoons granulated stevia.
  • 1 apple, grated.
  • Grown-Up Berry Sauce.

Directions

1. Combine the flour, egg, milk and stevia, then add the apple and stir gently.

2. Melt some butter in a frying pan over medium–low heat.

3. Spoon in 1/3 cup batter. When the surface starts to bubble, flip and cook on the other side.

4. Repeat until all the batter is used.

5. Serve four pancakes for breakfast with Grown-Up Berry Sauce and four pancakes tomorrow with sauce.

You will need the recipe for Grown-Up Berry Sauce.

You may like to try some other toppings on other occasions. Consider The Waldorf, Spiced Pumpkin Butter + Pecans or simply top with a couple of cubes of Coconut Butter, melted.

We advise eating sweet foods like this one as occasional treats only. Also, we encourage you to cut the sweetener down even more if you can.
