Poached Eggs with Peas, Zucchini + Tuna

This dairy free, gluten free and paleo recipe can be used for breakfast, lunch and dinner. A simple, well balanced meal.

Ingredients

  • frozen peas.
  • chopped zucchini.
  • small tin plain tuna.
  • green shallots or red onion.
  • capers.

Directions

After removing the eggs from the hot water, use the same pot to steam some frozen peas and chopped zucchini (place in a steamer attachment on top). Mix the steamed veggies with a tin of tuna, some finely chopped green shallots or red onion and capers. Plop a poached egg on top to serve.
