Poached Egg in Sauce or Soup

If you have left over soup or sauce, boil an egg in it to add a little extra protein and flavour, and it also reduces waste. It's a win win!

Ingredients

  • sauce or soup, for poaching.
  • parmesan cheese.
  • 1-2 eggs per person.

Directions

I like this idea: poach the egg in a sauce instead of water. I also like the idea of using leftover soup instead of water. Simply heat the soup in a small pan and poach the eggs. Serve with a sprinkle of Parmesan cheese.
