Baked Rhubarb Oatmeal

Easy gluten-free, sugar-free baked rhubarb oatmeal.

Ingredients

  • 230 g rhubarb, fresh or frozen, chopped into 2 cm pieces.
  • 230 g rolled oats (use gluten free if you prefer).
  • 100 g almonds, roughly chopped.
  • 2 tablespoons chia seeds.
  • 1 teaspoon ground cinnamon.
  • 1 pinch salt.
  • 2 cups Homemade Almond Milk.
  • olive oil, for brushing.

Directions

Preheat oven to 180ºC / 350°F and brush a medium-sized oven dish lightly with olive oil. Cover the bottom of the dish with rhubarb pieces. Combine the oats, almond, chia seeds, cinnamon and salt in a separate bowl. Pour the mixture on top of the rhubarbs and finally pour the almond milk (evenly) on top.
Bake for 30 minutes. Serve warm.
