Avocado + Coconut Popsicles

Great for kids and adults alike, these avocado and coconut popsicles are a cool, sweet treat for hot days.

Ingredients

  • 1 large ripe avocado.
  • 200 ml coconut cream.
  • juice of 1 lime.
  • 3 tablespoons coconut water.
  • 3 teaspoons rice malt syrup.
  • 1 tablespoon chia seeds, preferably white.
  • 1/4 teaspoon salt.

Directions

Blend all the ingredients in a food processor or use a stick blender. Beat to a creamy liquid. Spoon the mixture into the ice-cream moulds, then insert the sticks. Freeze for at least 4 hours.

You can also make these with the flesh of a baby coconut rather than avocado, and use an additional 3 tablespoons of coconut water.
