Zingy Passionfruit Shaker

I Quit Sugar - Zingy Passionfruit Shaker

Zingy, zesty and full of flavour, this passionfruit shaker is the best way to cool down in the Summer heat.

Preparation: 5 mins

Ingredients

  • 2 passionfruit, seed and juice removed.
  • 1 teaspoon rice malt syrup.
  • 2 cm ginger, finely chopped, plus more slices to serve.
  • 5 mint leeaves, plus extra to serve.
  • 1/2 lime, juiced.
  • 2 cups sparkling water.

Directions

1. Add rice malt syrup with a dash of boiling water to a jug. Stir until rice malt syrup dissolves.

2. Add the passionfruit, ginger, mint and lime juice. Top with soda water. Serve with extra ginger slices and mint leaves if you like.


Note

Make it alcoholic: Add ½ shot of white rum to each glass.
