Veggie + Bacon Hash with Eggs

This Paleo breaky is full of fresh veggies, great proteins and good quality fats to keep your energy levels up until lunch time.

Ingredients

  • 1-2 rashers of preservative-free bacon.
  • 3 Brussel sprouts, quartered.
  • 1/2 leek, thinly sliced.
  • 1 clove of garlic, minced.
  • 1 small purple potato, thinly sliced.
  • 1-2 eggs.
  • Sea salt and freshly cracked pepper, to taste.

Directions

1. On medium-heat, fry the bacon until slightly crispy, then remove from pan and chop into small bits.

2. Add in the leek and cook until wilted. Add in the remaining veggies and cook until soft, but not over cooked.

3. Add the bacon back into the mix and make a couple of nests in the veggies. Then, crack and egg or two into the nests and cook until the egg whites are thoroughly cooked, sunny-side up style. Serve with some sea saly and freshly cracked pepper.
