The Ultimate Beef Sandwich

Ingredients

  • 4 slices sourdough bread, toasted.
  • 2 portions leftover Slow Cooked Italian Beef Brisket, reheated (see note).
  • 2 tablespoons Dijon mustard.
  • 1 cup rocket leaves.

Quick Coleslaw

  • 1 1/2 cup coleslaw mix (make your own with 1/2 cup each of shredded purple cabbage, white cabbage and carrot).
  • 2 teaspoons full-fat, whole egg mayonnaise.
  • squeeze of lemon juice.

Chilli Tomato Relish

  • 1 teaspoon olive oil.
  • 1/2 small brown onion.
  • 1 clove garlic, minced.
  • 1 cm ginger, minced.
  • 1/2 teaspoon rice malt syrup (optional).
  • 1 small red chilli, finely chopped (or use 1/2 teaspoon dried chilli flakes).
  • 2 medium tomatoes, finely chopped.
  • 1 teaspoon apple cider vinegar.
  • pinch of sea salt and freshly ground black pepper.

Directions

1. Start with making the relish by adding oil, onion, garlic and ginger to a pan on medium heat. Cook until onion is translucent and garlic is fragrant. Add in the remaining ingredients and cook for 20 minutes until the mixture thickens. Ensure you are continually scraping the bottom of the pan to avoid sticking.

2. For the coleslaw, add all ingredients together in a bowl.Toss to combine and set aside.

3. Now to assemble the sandwich. Smother the four slices of toasted sourdough in ½ tablespoon of mustard each. Then top two slices with half of the Coleslaw, the Ultimate Beef Brisket, rocket leaves, drizzle with the Chilli Tomato Relish. Place the other piece of sourdough on top, and slice each sandwich in half. There you have your Ultimate Beef Sandwich!
