I Quit Sugar: Apple + Parsnip Buns Easter recipe

We're not trying to brag, but these Spiced Apple + Parsnip Buns are pretty darn delicious! The grated parsnip adds an earthy sweetness, complemented perfectly with a touch of spice. Served with lashings of butter, they're the perfect baked Easter treat.

Servings: 8
Preparation: 15 mins
Cooking: 20 mins

Ingredients

  • 200 g parsnip, grated.
  • 1 small (100g) apple, grated.
  • 150 g spelt flour.
  • 2 teaspoons baking powder.
  • 1/2 teaspoon baking soda.
  • 1/2 teaspoon sea salt.
  • 1 teaspoon allspice.
  • 1 teaspoon cinnamon, ground.
  • 2 eggs, beaten.
  • 50 ml full-fat milk.
  • butter, to serve.

Directions

1. Preheat oven to 190°C/375°F/Gas Mark 5 and line a baking tray with baking paper.

2. In a large mixing bowl, combine the parsnips, apple, spelt flour, baking powder, baking soda, salt, allspice and cinnamon. Add in the eggs and milk and stir to combine. Add a dash more milk if the dough doesn't easily come together.

3. Divide dough into 8 equal portions and roll each into a rough ball. Place onto the prepared baking tray.

4. Place buns into the oven and cook for 20 minutes. Once cooked, remove from the oven and serve warm with a generous spread of butter.

Note

  • These buns aren't overly sweet and can be served as a savoury breakfast option. Heat up two buns and add some butter, good-quality ham, cheese and spinach and you're good to go!
