Sophisticated Lavender Snaps

These lavender snaps are a great mid morning or afternoon snack. For a little more flavour, boost the amount of lavender, vanilla and orange zest.

Ingredients

  • 2 1/2 cups almond meal.
  • 1/2 teaspoon bicarbonate of soda.
  • 1/2 teaspoon sea salt.
  • 120 g butter, softened.
  • 1/3 cup stevia granules.
  • 1 tablespoon vanilla powder.
  • 2 teaspoons finely chopped dried lavender.
  • 1 tablespoon finely grated orange zest.

Directions

Preheat the oven to 180°C / 350ºF and line a baking tray with baking paper. Pulse the almond meal, bicarbonate of soda and salt briefly in a food processor. Add the remaining ingredients and blend a little more to combine. Spoon heaped tablespoons of the mixture onto the baking tray and press down with your hand to flatten. Bake for about 8 minutes until golden. Cool on wire racks.
