Sausage and Greens Pie

Ingredients

  • 1 sheet of all butter puff pastry.
  • 4 eggs, whisked.
  • 1 sausage with meat squeezed out of lining..
  • 1 small brown onion, diced.
  • 2 cups kale, although any old greens will work fine.
  • salt and pepper to taste.
  • 1 teaspoon coconut oil.

Directions

1. Pre-heat the oven to 200 degrees celsius
2. Mould your puff pastry into your baking dish and prick holes in the bottom with a fork. Using a pastry brush (or just your fingers) lightly brush some of the whisked egg over the pastry. Place into the oven and cook for 10 minutes, or until pastry is slightly brown.
3. Meanwhile, in a fry pan, sauté the onion with the coconut oil until transparent. Add in the sausage meat for 2-3 minutes until just cooked. Allow to cool.
4. Add the cooled sausage meat and onion to the whisked eggs, add in your greens, salt and pepper and fold everything together.
5. Remove the pastry from the oven and fill with the pie filing.
6. Turn the oven down to 180 degrees and pop the pie in. Cook for 25 minutes until the egg is set.
