Radish + Corn Salsa with Corn Chips

I Quit Sugar: Radish + Corn-Salsa recipe

Need a speedy lunch idea that tastes delicious and is super nutritious? We've got you covered with this veggie-packed giant salsa bowl. Use some plain corn chips to scoop up the zesty veggies and beans. Yummo!

Ingredients

  • 1/2 cup tinned corn kernels, drained and rinsed.
  • 1/2 cup cooked black beans.
  • 1/2 cucumber, diced.
  • 1 large tomato, diced.
  • 1/4 red onion, finely diced.
  • 2 radish, finely sliced.
  • 1/2 lime, juiced.
  • sea salt and freshly cracked black pepper, to season.
  • 50 g plain, sugar-free corn chips, to serve.

Directions

1. Add all ingredients besides the corn chips into a serving bowl. Toss to combine. Serve alongside the corn chips.
