- 1/2 cup cooked black beans.
- 1/2 cucumber, diced.
- 1 large tomato, diced.
- 1/4 red onion, finely diced.
- 2 radish, finely sliced.
- 1/2 lime, juiced.
- sea salt and freshly cracked black pepper, to season.
- 50 g plain, sugar-free corn chips, to serve.
Directions
- 1. Add all ingredients besides the corn chips into a serving bowl. Toss to combine. Serve alongside the corn chips.
