Pumpkin Purée

Servings: makes 1 - 1 1/2 cups
Preparation: 10 mins
Cooking: 35 mins

Ingredients

  • 400 g pumpkin (any variety will do), peeled and roughly chopped.
  • 1 tablespoon olive oil.
  • sea salt, to taste.

Directions

1. Preheat oven to 200°C / 400°F / Gas Mark 6.

2. Toss the pumpkin chunks with olive oil and salt, and bake on a lined trays in the oven until tender – about 30-35 minutes.

3. Once cooked through, purée with a stick/hand blender (or mash well by hand).
