Ingredients
- 400 g pumpkin (any variety will do), peeled and roughly chopped.
- 1 tablespoon olive oil.
- sea salt, to taste.
Directions
- 1. Preheat oven to 200°C / 400°F / Gas Mark 6.
2. Toss the pumpkin chunks with olive oil and salt, and bake on a lined trays in the oven until tender – about 30-35 minutes.
3. Once cooked through, purée with a stick/hand blender (or mash well by hand).
