Peachy Italian Salad with Lime Vinaigrette

I Quit Sugar: Peachy Italian Salad with Lime Dressing recipe

Traditionally, Italian salads only contain a few ingredients, but they're always so fresh and punchy with flavour. We’ve used watercress to up the nutrition factor and also because we just love our greens (we’re crazy, we know!)

Ingredients

  • 2 cups watercress, washed and roughly torn.
  • 1 yellow peach, pip removed and cut into slices.
  • 50 g prosciutto, torn.
  • 50 g Mozzarella, torn.

Lime Vinaigrette

  • 1/2 lime.
  • 1 tablespoon extra virgin olive oil.
  • 1 small garlic clove, minced.
  • sea salt, to season.
  • freshly cracked black pepper, to season.

Directions

1. Place watercress, peach, prosciutto and mozzarella onto a large plate.

2. To make Lime Vinaigrette, combine all ingredients together in a jar. Pour over salad to serve.
