One-Pan Sweet Chilli Jam Fish

Ingredients

  • 1 bunch broccolini.
  • 1/4 cup cashews.
  • 300 g skinless whiting fillets, cut into even sizes.

Zesty Basil Salad

  • 1/2 bunch basil, leaves picked.
  • 2 cups mixed salad leaves.
  • 1 small (100g) cucumber, diced.
  • 1/2 lemon, juiced.

Deceptively Sweet Chilli Sauce

  • 1/4 cup apple cider vinegar.
  • 2 teaspoons tapioca or arrowroot flour.
  • 1 teaspoon rice malt syrup.
  • 1 long red chilli, deseeded and very finely chopped (or 2 teaspoons chilli flakes).
  • 2 tablespoons water.
  • 2 tablespoons fish sauce.
  • 2 cloves garlic, minced.
  • 1/4 teaspoon sea salt.

Directions

1. Preheat oven to 180ºC / 350ºF / Gas Mark 4.

2. To make the Deceptively Sweet Chilli Sauce, place all ingredients together in a jar and shake until combined.

2. Arrange broccolini, cashews and fish pieces in a baking dish. Drizzle with Deceptively Sweet Chilli Sauce. Bake for 10-15 minutes, or until the fish is cooked through.

4. Meanwhile toss the basil leaves, mixed salad leaves and cucumber together. Squeeze over lemon juice and set aside.

5. Once fish has cooked, serve half of the fish, cashews and broccolini with half of the Zesty Basil Salad. Place the remaining into a container to enjoy for lunch tomorrow.
