Muesli Blinis

Turn everyones go-to breakfast - muesli- into a party nibble. Little pancake blinis topped with anything you like.

Ingredients

  • 1 cup sugar-free muesli.
  • 1 cup greek yoghurt.
  • 2 eggs.
  • salt and pepper to taste.

Directions

1. Using a food processor, grind The Gluten-Free Muesli to a course flour like consistency.
2. Combine with greek yoghurt, eggs and salt and pepper.
3. Drop a tablespoon of batter onto a non stick pan until small bubbles appear, turn to briefly cook the other side.

* Serve as a canapé top with sour cream and chives or a dollop or fermented daikon.
