Grilled Vegetable Wrap

Have some left over vegetables? Use them up by throwing them into a wrap combined with pesto and ricotta and you have yourself a tasty lunch.

Preparation: 5 mins

Ingredients

  • 50 g full-fat ricotta.
  • 2 tablespoons Basil + Spinach Pesto.
  • 1 wholemeal wrap.
  • 1 cup baby spinach leaves.
  • leftover grilled vegetables from last night.

Directions

1. Spread ricotta and pesto across wrap.

2. Top with spinach leaves and vegetables.

3. Roll up the wrap and serve immediately.


Note

Gluten free option: Replace whole wheat wrap with a gluten-free wrap.

Dairy-free option: Replace ricotta with 1/4 avocado, mashed.
