Ingredients

  • 1 cup almond, rice or coconut milk.
  • 1/4 avocado.
  • 1 cup baby spinach ( alternatively, you can use iceberg, cos or romaine lettuce).
  • 1/2 small (50g) zucchini, roughly chopped.
  • 1cm ginger, finely chopped into matchsticks.
  • juice of half a lemon, optional.

Directions

1. Place all ingredients in a high-speed blender. Blend until smooth. Add 1/4 cup water if you would prefer a thinner consistency.

2. Serve immediately with two Sweet Potato Protein Balls.

Note

Tip: Make smoothie bags to reduce prep time in the mornings. Freeze the avocado, spinach, zucchini and ginger in a zip lock bag altogether. In the morning just place all the frozen ingredients into the blender with your choice of milk and lemon juice. Freezing the ingredients before blending makes this smoothie even creamier.

Didn't freeze your ingredients? Simply add 1/4 cup ice cubes into your blender before blitzing for a colder, more refreshing smoothie.
