I Quit Sugar 8WP Recipe: Paleo Ham Sambo with Veggie Bread

Use up your batch of Paleo Veggie Bread in this Fancy Ham Sambo. It's a quick to whip up for lunch and will keep you fueled until dinner time.

Ingredients

  • 2 slices Paleo Veggie Bread, toasted.
  • 1/3 avocado, sliced or mashed.
  • 20 g feta, crumbled.
  • 1 cup mixed salad leaves.
  • 100 g leg ham off the bone.

Directions

1. Toast Paleo Veggie Bread either in a pan, sandwich press or toaster.

2. Top Paleo Veggie Bread with slices of mashed avocado, mixed leaves, ham and feta. Enjoy sandwich open or closed.


Note

Dairy-free option: Omit feta. Add a drizzle of tahini if you like.

Boost this recipe: Add a smear of Dijon or wholegrain mustard. Serve with a drizzle of olive oil or a squeeze of fresh lemon juice.
