Leftover cauli stems? Freeze and add them to your smoothie for an extra creamy blend! We’ve also chucked in a zucchini that was on its last legs – trust us, it totally works and makes this blitz delicious, veggie-packed and best of all... waste-friendly!

Ingredients

  • 1 cup cauliflower stems, frozen.
  • 1/2 zucchini, frozen.
  • 1/3 cup raw cashews, soaked in water for at least 30 minutes.
  • 1/4 cup mint, fresh, leaves picked.
  • 1 1/4 cup almond milk.
  • 2 tablespoons raw cacao powder.
  • 2 tablespoons protein powder, chocolate or vanilla.
  • 1 tablespoon raw cacao nibs.
  • 1 tablespoon coconut flakes, to serve.

Directions

1. Place all ingredients (except for the raw cacao nibs and coconut flakes) in a high-speed blender and blitz on high until smooth. Pour into a jar or glass to serve and top with cacao nibs and coconut flakes.
