Colcannon

Colcannon is an Irish dish that combines mashed spuds with mashed kale or cabbage - yummo!

Ingredients

  • 1 kg potatoes, well scrubbed and chopped into 3-4cm chunks.
  • 1/2 head cabbage, chopped.
  • 100g butter, at room temperature.
  • sea salt and pepper to taste.
  • 1 cup milk or cream.

Directions

1. Add potatoes to a large pot of water. Bring to the boil, then simmer for 15 minute, until soft. Use a potato masher to mash until smooth.

2. Add 1/2 of the butter to a large fry pan on medium heat. Add in the shredded cabbage and cook until wilted. Add the mashed potato, milk and salt and pepper to the cabbage and stir until combined.

3. Transfer to a serving bowl and serve into 2 portions.
