- 2 tablespoons protein powder (if you don't have protein powder, you can use an extra 2 tablespoons almond meal).
- 1 cup almond meal.
- 4 tablespoons coconut oil, melted.
- 1 lemon, juice and zest.
- 1 1/2 cup desiccated coconut.
- 2 tablespoons rice malt syrup.
- 1/2 teaspoon vanilla powder.
- extra desiccated coconut, for rolling.
Directions
- 1. Place all ingredients in a food processor or blender and whizz until starting to come together.
2. Shape into balls and roll in desiccated coconut. Allow to chill for at least 30 minutes before serving. Store balls in freezer.
