I Quit Sugar’s Favourite Sugar Free Coco Nutty Granola

I Quit Sugar - Coco-Nutty Granola recipe

The Coco Nutty Granola is an all time favourite from Sarah Wilson’s first book, I Quit Sugar, and after one batch it’s easy to see why! This Sugar Free Coco-Nutty Granola is divine and the perfect replacement for store bought cereals. Eat it for breakfast with yoghurt or tote in a jar for an afternoon snack.

Cooking: 25 mins

Ingredients

  • 1/4 cup coconut oil, melted.
  • 3 cups coconut flakes.
  • 2 cups unsalted mixed nuts, roughly chopped (see note).
  • 2 tablespoons chia seeds.
  • 1 teaspoon ground cinnamon, optional.
  • 1/2 cup full-fat natural yoghurt, to serve.

Directions

1. Preheat oven to 120ºC / 250°F / Gas Mark ½ and line a baking tray with baking paper.

2. Place all ingredients onto the baking tray and toss to combine, then spread evenly on the tray.

3. Bake for about 20-25 minutes until golden, turning halfway through the cooking time. The darker it is, the crunchier it will be.

4. Remove from the oven and allow to cool.

5. Store it in an airtight container in the pantry for up to 2 weeks (or in the freezer for even longer!).


Note

3/4 cup = one serve.

We recommend using brazil nuts in your mix as they're nutrient dense, packed with fibre and are a great source of selenium, a powerful antioxidant.
