Cauliflower Cheese

Love mac and cheese but gluten's not your friend? This grain-free Cauliflower Cheese recipe is just as good. Perfect served as a side to a leafy green salad and some slow-cooked meat.

Ingredients

  • 1 head of cauliflower.
  • 2 tablespoons butter.
  • 2 tablespoons gluten-free plain flour.
  • 1 cup milk (full fat or coconut milk).
  • 1 1/2 cup grated cheddar cheese.

Directions

1. Pre heat oven to 180 degrees Celcius

2. Trim cauliflower and cut into small florets. Add to a pot of boiling water and cook for three minutes until slightly softened. Drain and arrange into an oven safe baking dish.

3. Place butter into a saucepan over medium heat. Add flour. Cook, stirring for 1 minute or until it starts to bubble. Reduce heat to a simmer and slowly add in the milk, whisk until smooth.

4. Simmer for 5 minutes or until sauce has thickened. Remove from heat and stir through 1 cup of cheddar cheese. Pour over the cauliflower florets. Sprinkle remaining cheese on top.

5. Place in oven and bake for 20 minutes until the top is golden.
