Breakfast Quinoa Trifle

This fresh breakfast is perfect for warm summer mornings. Prepare the night before and assemble in the morning - quicker than a piece of toast!

Ingredients

Quinoa layer

  • 1/2 cup flaked (rolled) quinoa.
  • 1 tablespoon shredded coconut.
  • 1 handful chopped almonds.
  • 1 cup Pureharvest Unsweetened Almond Milk.
  • 1/2 teaspoon cinnamon.
  • 1/2 teaspoon vanilla.

Nut mix layer

  • 1/2 tablespoon sunflower seeds.
  • 1 tablespoon pumpkin seeds.
  • 1 tablespoon pecans.
  • 1/2 teaspoon cinnamon.

Yoghurt Layer

  • Goats yoghut.

Berry layer

  • Frozen mixed berries.

Directions

1. For the quinoa layer mix all the ingredients into a bowl and soak overnight in the fridge.

2. To make the trifle place a few spoonfuls of the soaked quinoa in the bottom of a glass. Next sprinkle a layer of nut mix and top with a couple of spoonfuls of yoghurt. Repeat this process as many times as you like to create a delicious layered breakfast.

* If you are having fruit, adding a couple of berry layers is a great way to give this superfood breakfast an antioxidant boost!
