BLAT Breakfast Tacos

If you love the classic BLAT sandwich, you’ll love these cheesy BLAT Breakfast Tacos. We’ve cooked the eggs in bacon fat to get them nice and crispy and sprinkled over a little chilli for a much needed kick in the mornings. Serve these as the perfect weekend brunch option for your friends or family.

Ingredients

  • 200 g middle bacon, rind removed.
  • 8 free-range eggs.
  • 1 teaspoon chilli flakes.
  • 8 small tortillas.
  • 100 g cheddar cheese, grated.
  • 1 medium butter lettuce.
  • 2 large tomatoes, diced.
  • 1 large avocado, diced.

Directions

1.Preheat oven to 200°C/400°F/Gas Mark 6 and line two large baking trays with baking paper.

2. Place tortillas onto the baking trays. Carefully crack an egg onto each tortilla and sprinkle cheese around the edges of the egg. Place trays into the oven and bake for 10 minutes until egg whites have set and cheese is melted and golden.

2. While tortillas are in the oven, place a large frypan over medium heat. Add in bacon pieces and cook on both sides until crispy.

5. Remove tortillas from the oven and serve each with a slice of bacon, lettuce, tomato and avocado. Season generously with sea salt and freshly cracked pepper.
