Grown-Up Berry Sauce

This divine low fructose berry sauce is great as a sweet coulis accompaniment to desserts or spooned over yoghurt.

Ingredients

  • 2 cups frozen berries.
  • 1 tablespoon rice malt syrup.
  • 1 teaspoon finely grated fresh ginger.
  • 1 star anise, finely crushed.
  • 1/4 teaspoon ground cinnamon.

Directions

1. Combine all the ingredients in a small saucepan and bring to the boil.

2. Lower the heat and simmer for 5-10 minutes.

3. Serve warm or cool. Store in a clean glass jar in the fridge for up to 2 weeks.
