Basil Pesto + Zucchini Fettuccine

This raw zucchini pasta with a luscious basil pesto is a perfect summer dish. Try it served alongside some grilled garlic prawns or fish.

Ingredients

  • 2 medium zucchini.
  • 1/2 cup store-bought basil pesto (see note).

Directions

1. Using a mandolin or potato peeler, slice the zucchini into long fettucine-like strips. Add zucchini to a mixing bowl and stir through the pesto.

2. Serve into two bowls with an extra drizzle of olive oil and a sprig of basil.

Variation: If you prefer, blanch the zucchini in hot water quickly (1 min or so) and drain before tossing through the pesto.
