Barbecued Beetroot Crisps

Barbecue beetroot chips are so crunchy and delicious make a great side for any meal or eaten as a snack.  

Servings:
Cooking: 15 mins

Ingredients

  • 1 bunch beetroot, cut into 1cm thick slices.
  • olive oil, for brushing.
  • soft cheese, optional.

Directions

1. Turn the barbecue grill to a medium-high heat.
2. Brush the beetroot slices with olive oil and sprinkle lightly with salt and pepper.
3. Place the slices on the grill and cook for 8 to 10 minutes, turn, and then cook for a further 8 to 10 minutes on the other side until tender and lightly charred with grill marks.
4. Serve the barbecued beets warm or at room temperature with a soft cheese like feta.
