Bacon + Green Pea Smash

Not only does this mash have three different types of green veg, but it’s spiked with delicious smoky bacon. Spread on toast for a veggie-packed brekkie or pair with a piece of grilled fish or chicken for dinner!

Preparation: 5 mins
Cooking: 20 mins

Ingredients

  • 1/2 tablespoon coconut oil.
  • 100 g bacon, diced.
  • 2 teaspoons smoked paprika.
  • 1 cup green peas, frozen.
  • 1 head broccoli.
  • 2 cups spinach leaves.
  • 1/2 cup cream.
  • 40 g parmesan cheese.
  • Sea salt and freshly ground black pepper.

Directions

1. Heat coconut oil in a large frying pan over a medium heat. Add bacon and smoked paprika and sauté for 5 minutes, until golden and fragrant. Add in broccoli and cook for a further 10 minutes, until broccoli softens. Add in the peas, spinach and cream and cook for a further minute, or until spinach is wilted and peas are defrosted.

2. Remove from the heat and place ingredients in a large bowl with the parmesan cheese, salt and pepper. Blitz with a stick blender until smooth.

3. Serve topped with shaved parmesan, a drizzle of olive oil and a sprinkle of paprika.


Note

To really jazz up this side, serve topped with extra crispy bacon bits.
