I Quit Sugar - 5-Minute Fig, Radicchio + Blue Cheese Salad

This combo of ingredients brings the best of sweet and savoury together. With bitter radicchio leaves and nicely sweet fig, this salad will have your taste buds dancing!

Ingredients

  • 1 cup radicchio leaves, roughly torn.
  • 1 cup mixed salad leaves.
  • 1 small fig, sliced.
  • 1/2 cup toasted walnuts.
  • 80 g shaved turkey breast.
  • 20 g hard blue cheese, crumbled.

Dressing

  • 2 teaspoons Dijon mustard.
  • 1 tablespoon extra virgin olive oil.
  • 1/4 teaspoon apple cider vinegar.

Directions

1. Add all salad ingredients into a large mixing bowl, toss to combine.

2. Place mustard, oil and vinegar into a small jar. Stir to combine. Drizzle over salad and toss to coat. Serve.


Note

Vego? Leave out the turkey, this salad still tastes great without it!
