Cheat’s Croque Monsieur

This spin on the classic Croque Monsieur is made more nutritious with the added dose of greens.

Ingredients

  • 2 slices of sourdough bread, white or rye.
  • 1 teaspoon butter.
  • 1 tablespoon Dijon mustard.
  • 2 kale leaves, finely shredded with a knife.
  • 2 slices Gruyere or cheddar cheese.
  • 2 slices ham off the bone.

Directions

1. Place your bread under the grill for 5 minutes, or until lightly toasted. Remove and spread both the untoasted sides with butter and then mustard.

2. Top one of the untoasted sides with the shredded kale, ham and half of the cheese. Sandwich the two pieces of bread together, with toasted sides facing outwards. Top the sandwich with the remaining cheese on top of the bread.

3. Place sandwich back under the grill for 10 minutes, until cheese is bubbling and golden.


Note

Gluten-free option: Swap out sourdough bread for a gluten-free loaf or make your own. Try out our Paleo Veggie Bread or Gluten-Free Buckwheat Loaf.

Dairy-free option: Replace cheese and butter inside the Croque Monsieur with a spread of avocado and omit the cheese toasted on top.
