Ingredients
- 1/2 cup pumpkin purée.
- 1 tablespoon coconut flour.
- 1/2 teaspoon ground cinnamon.
- 2 eggs.
- butter or coconut oil, for frying.
Directions
- 1. Combine the pumpkin purée, flour, eggs and cinnamon in a small bowl.
2. Heat some butter or oil in a small frying pan over medium heat and drop in 2-tablespoon dollops of the pikelet mixture.
3. Cook for 3 minutes on each side, or until golden.
Serve these Pumpkin Pikelets with a fun topping of your choice! Some grated apple, toasted walnuts, extra cinnamon or maybe a drizzle of rice malt syrup.
