Green Eggs and Ham

This child friendly breakfast will keep the kids happy and give them a perfect nutritious start to the day.  

Servings:

Ingredients

  • 2 eggs, whisked.
  • 1 tablespoon milk or cream.
  • 1 tablespoon Basil and Spinach Pesto.
  • 1 slice of sourdough bread, toasted.
  • 1/2 teaspoon butter.
  • 2 slices of ham off the bone.
  • sea salt and pepper.

Directions

1. Whisk eggs, milk and pesto together until well combined.

2. Heat oil in a small skillet. Add eggs and move around pan with a wooden spoon until just cooked.

3. Serve on buttered sourdough toast with ham. Season with salt and pepper.
