Spaghetti Arrabiata

Vegetarian pasta with a roast capsicum sauce is a great meal to make when your just not sure what to have.  

Servings: 2
Preparation: 5 mins
Cooking: 10 mins

Ingredients

  • 200 g spaghetti (or pasta of your choice).
  • 1 teaspoon olive oil.
  • 1 small red chilli, deseeded, finely chopped.
  • 1 cup Roast Capsicum Sauce.
  • 1/4 cup flaked Parmesan cheese, to serve.
  • basil leaves, to serve.

Directions

1. Cook pasta according to packet directions. Drain.

2. Meanwhile, heat oil in a saucepan over medium heat. Add chilli, cook for 1-2 minutes or until fragrant. Add Roast Capsicum Sauce. Cook until heated through. Add pasta. Toss through sauce.

3. Divide between a bowl and a lunchbox. Sprinkle with basil and Parmesan to serve.


Note

Gluten-free option: Serve arrabiata sauce with zucchini noodles.

Dairy-free option: Omit Parmesan. Sprinkle with nutritional yeast flakes.

Not a fan of chilli? Simply omit it from the recipe.
