Ingredients
- 50 g full-fat ricotta.
- 2 tablespoons Basil + Spinach Pesto.
- 1 wholemeal wrap.
- 1 cup baby spinach leaves.
- leftover grilled vegetables from last night.
Directions
- 1. Spread ricotta and pesto across wrap.
2. Top with spinach leaves and vegetables.
3. Roll up the wrap and serve immediately.
Note
Gluten free option: Replace whole wheat wrap with a gluten-free wrap.
Dairy-free option: Replace ricotta with 1/4 avocado, mashed.
Have some left over vegetables? Use them up by throwing them into a wrap combined with pesto and ricotta and you have yourself a tasty lunch.
