Roast Chicken + Quinoa Salad

This protein packed chicken and quinoa salad is a great lunch idea, it is full of essential vitamins and minerals to get you through your day.

Ingredients

  • 1 big sweet potato.
  • 1 tablespoon coconut oil.
  • 2 cups cooked quinoa.
  • 1 whole roast chicken.
  • 1 bag of baby spinach.
  • 1 bunch of coriander.
  • 1 bunch of mint.
  • 1/4 red cabbage.
  • 1 telegraph cucumber.
  • 1 red capsicum.
  • 1 packet of mixed salad sprouts.
  • olive oil.
  • apple cider vinegar.

Directions

1. Cut sweet potato into 2cm cubes and toss in one tablespoon of coconut oil. Roast in a 200C oven until crispy (about 30-35mins).
2. Pick leaves off herbs and mix through quinoa with baby spinach and finely sliced red cabbage.
3. Cut cucumber and capsicum into similar sized dice to sweet potato and toss through salad with sprouts. Add chicken and sweet potato.
4. Dress the salad with olive oil and apple cider vinegar.
