Ingredients
- 1/2 tablespoon coconut oil.
- 100 g bacon, diced.
- 2 teaspoons smoked paprika.
- 1 cup green peas, frozen.
- 1 head broccoli.
- 2 cups spinach leaves.
- 1/2 cup cream.
- 40 g parmesan cheese.
- Sea salt and freshly ground black pepper.
Directions
- 1. Heat coconut oil in a large frying pan over a medium heat. Add bacon and smoked paprika and sauté for 5 minutes, until golden and fragrant. Add in broccoli and cook for a further 10 minutes, until broccoli softens. Add in the peas, spinach and cream and cook for a further minute, or until spinach is wilted and peas are defrosted.
2. Remove from the heat and place ingredients in a large bowl with the parmesan cheese, salt and pepper. Blitz with a stick blender until smooth.
3. Serve topped with shaved parmesan, a drizzle of olive oil and a sprinkle of paprika.
Note
To really jazz up this side, serve topped with extra crispy bacon bits.
