Ingredients
- 200 g parsnip, grated.
- 1 small (100g) apple, grated.
- 150 g spelt flour.
- 2 teaspoons baking powder.
- 1/2 teaspoon baking soda.
- 1/2 teaspoon sea salt.
- 1 teaspoon allspice.
- 1 teaspoon cinnamon, ground.
- 2 eggs, beaten.
- 50 ml full-fat milk.
- butter, to serve.
Directions
- 1. Preheat oven to 190°C/375°F/Gas Mark 5 and line a baking tray with baking paper.
2. In a large mixing bowl, combine the parsnips, apple, spelt flour, baking powder, baking soda, salt, allspice and cinnamon. Add in the eggs and milk and stir to combine. Add a dash more milk if the dough doesn't easily come together.
3. Divide dough into 8 equal portions and roll each into a rough ball. Place onto the prepared baking tray.
4. Place buns into the oven and cook for 20 minutes. Once cooked, remove from the oven and serve warm with a generous spread of butter.
Note
- These buns aren't overly sweet and can be served as a savoury breakfast option. Heat up two buns and add some butter, good-quality ham, cheese and spinach and you're good to go!
